What do you feed a sickly rat, doesn't eat "fatty foods"?

As some of you know my boy Sherlock has had pneumonia twice within a 3 month span and on top of that lost his best bud when he started to get better.

At his highest weight he was barely 460 and now he is a stable 330ish. Thankfully he gained back some that he lost and he just started to eat "normal" again til this past week. For almost 3 months he has been on Zithromax and baytril.

He is the pickest rat. He will only eat bananas, cantaloupe, the block and he will only eat his meds on bread. I've tried baby food, he stopped eating peas, ensure (3 different flavors), baby cereal and eggs.

Only thing I haven't done is yogurt but will that even help him gain weight?

I don't want him to get severely sick again since he is so scrawny. I'm at my wits end. He is finally acting normal and not always huffy and spiky. His breathing isn't 100% but it's only heavy when he has been walking around. I was hoping for a weight gain this week since he has been chipper but no results.

What to do?
 
Have you tried something like mashed potatoes? Sweet potato is another favourite for some rats.
Also, you could try avocado. It's loaded with good fat which can help him gain weight.
 
I was a bit scared to try the avocado because I heard parts of it were poisonous. I could definitely try the mashed regular/sweet potatoes. I will try that next. Thanks!
 
I've read that the avocado is only toxic around the skin and the seed, but I, too, have been scared. Nuts have lots o' fat.
 
Another possibility is to smash or soak lab block in water or water mixed with Ensure to help get some more calories into them.
