what are some signs that a rat has gone into labor?
and whats the best thing to do for them when they go into labor?

It's really hard to tell... mom will go hide, usually, to have her babies in peace and quiet. But if she's having babies, there will be blood. If she's in labour, in some, you can actually see her stomach contract.
 
She may also try to nip or bite you if your hand enters her cage, especially when getting very close to giving birth. But not all do this.
